Ingredients:

  • 3 tablespoons real mayonaise
  • 1 Cucumber (sliced)
  • 1/4 cup of vinegar (white)
  • 2 tablespoons of sugar or Spenda (artificial sweetener)

Directions:

  1. Slice cucumber and place in a large salad bowl.
  2. Mix in a medium sized mixing bowl the mayonaise and vinegar until liquid creaminess.
  3. Add sugar or artificial sweetener to taste and mix again.
  4. Pour over sliced cucumbers and enjoy.

Comments:

I included the text about the artificial sweetener for those of you who are on the South Beach Diet. This is really perfect as real mayonaise is allowed (mayonaise being an egg/olive oil mixture is really perfect). With the artificial sweetener (I recommend Splenda) it's a great salad or meal in itself. I've had this for dinner by itself and it really satisfys.
