Okay, this is easy and it's also good for you.

I have this when I need fiber and iron. You'll need a microwave and a large ziplock bag for this.

Ingredients:

  • 1 bag of leafy baby spinach (unfrozen)
  • 1 onion (halved and sliced - thinly)
  • 1 cup of Romano or Parmesean Cheese - grated.
  • 1 ½ cups of croutons
  • 1 cup of Italian Salad Dressing (oil, vinegar, and herbs)

Directions:

  1. Dump baby spinach and sliced onion into the ziplock bag.
  2. Add the cheese and the croutons to the bag.
  3. Close ziplock bag and shake it so that all ingredients are mixed thoroughly.
  4. Open the bag and add the salad dressing.
  5. Close the bag and shake/mix it again.
  6. Place the bag (with the salad inside obviously) into the microwave and cook on high for 1 minute.
  7. Remove bag from microwave and allow to cool slightly (at least enough for you to shake again)
  8. Shake contents in bag again and serve in small bowls.

Comments:

Now, I know what you're asking - Why the microwave and ziplock? This is a trick my father taught me. The salad dressing while warm and steaming in the bag will wilt the spinach and onions just enough to release some extra flavor into the salad. It will also mix with the onion and seep into the croutons. For a little more zest you may wish to add bacon bits (I have to use bacos because my wife is a vegetarian)

I warn you however to not overdo the microwaving. One minute should be plenty or the spinach will wilt too much and then you have very cooked spinach. My father used to nuke the salad dressing in an open bowl for 30 seconds and apply it to the salad.

I thought that would be too dangerous. When sealed in the bag, it's a lot safer.

This, once again, is great if you need a little extra iron and a little extra fiber.
