Ingredients:

1 lb. Chicken breast
1/2 Cup soy sauce
2 Tablespoons oil
1/2 cup chopped onion
1 teaspoon sugar
1 clove garlic, minced
1 broiler-fryer chicken, cut up

Directions:

  1. Combine soy sauce, oil, onion, sugar, and garlic.

  2. Marinate chicken in this mixture for at least 2 hours.

  3. Arrange chicken on rack in shallow pan.

  4. Brush with marinade.

  5. Bake at 325 degrees for 1-1/2 hours, basting occasionally, until tender.

Serves 4.

Comments and Suggestions:

This is of course for the MEAT portion of the meal. I suggest any type of stirfry you'd like. Preferrably onions, peppers, watersprouts and bean curd. Or you could do it the easy way and just get something like Birdseye stirfry and add your chicken to that vegetable assortment.
